Slow Cooker Potato & Hamburger Casserole
This easy dinner idea is perfect when you’re trying to create dinner with things you already have at home. We almost always have potatoes, onions and cheese in the refrigerator, and some ground beef in the freezer!
You can add the potatoes peeled or unpeeled to your slow cooker. It tastes great both ways! We tend to take off the majority of the peel for our kids, as they can still be picky about certain textures. However, when I make this for just and my husband we keep the peels on for the extra nutrients. This family dinner is pure comfort food, and something the entire family can enjoy together.
How to Make Crockpot Hamburger Potato Casserole
This made from scratch hearty meal is actually really easy and is sure to become one of your favorite slow cooker recipes.
Dice the onions.
Wash, peel and slice the potatoes, setting them aside. I prefer to use russet potatoes for this recipe.
Brown the ground beef in a large skillet on the stovetop on medium-high heat, adding salt and black pepper to taste. Drain the fat.
In a small bowl combine the garlic powder, paprika, creole seasoning, salt and pepper.
Add half of the potatoes to the bottom of the slow cooker and then sprinkle half of the diced onions over that. Add half of the seasonings, half of the meat and half of the cheese.
Repeat the layers again, and then drizzle the beef broth or chicken broth over the top evenly.
Cover and cook on the high setting for 4 hours, or on the low setting for 6-8 hours.
Customize this Beef and Potato Au Gratin
One of the things I like the most about this easy crockpot dinner is that it’s also easy to customize!
You can use any type of potato for this recipe as long as you slice them thin (around 1/4″). Don’t like russet potatoes, or have something else in the pantry? Red potatoes, white potatoes, gold potatoes and even sweet potatoes can be used instead.
This recipe also works great with a variety of vegetables. Add chopped green peppers, sliced carrots, green beans or broccoli before cooking, or serve with steamed fresh vegetables on the side.
While I like to use a shredded cheese mix, this Crockpot Hamburger Potato Casserole also tastes great with other shredded cheeses include mozzarella cheese, cheddar cheese, Mexican cheese blend and pepper jack cheese.
You can also experiment with different seasoning. Crushed red pepper flakes work great if your family enjoys some extra spice, while others might enjoy Italian seasoning or some onion powder.
Want this to be creamier? Add a can of cream of mushroom soup or cream of chicken before closing the lid!
This recipe also tastes really yummy with some chopped, crumbled bacon, green onions, sour cream or hot sauce. My kids love to eat this with garlic bread too. If you love gravy, this onion gravy recipe goes great with it.

- 6 peeled russet potatoes sliced ¼ inch thick
- 1 pound ground beef
- 1 cup diced white or yellow onion
- 1 tsp. paprika
- 1 tsp. creole seasoning
- 1 tsp. garlic powder
- 1 tsp salt
- ½ tsp. pepper
- 3 cups shredded cheese blend
- 1/2 cup chicken broth or beef broth
Instructions
- Brown the ground beef on the stovetop, adding salt and pepper to taste. Drain the fat and set aside.
- In a small bowl combine the garlic powder, paprika, creole seasoning, salt and pepper.
- Add half of the potatoes to the slow cooker and then sprinkle half of the onions over that. Add half of the seasonings, half of the meat and half of the cheese.
- Repeat the layers again, and then drizzle the broth over the top evenly.
- Cover and cook on high for 4 hours, or on low for 6-8 hours.
- Serve hot!
Notes
Do not open the lid while cooking as if the steam escapes the potatoes will not get soft enough.
