You might have noticed that we love using the slow cooker over here. As a busy mom of 3, Crockpot meals can be a huge time saver, especially on busy weeknights where we’ve been gone all afternoon at different activities.

I love that other than browning the meat, the slow cooker does most of the work for this dump meal. With hamburger meat, gooey cheese and lots of hashbrowns, my kids describe hamburger hash brown casserole as a cheeseburger and fries casserole!

This meal is so easy to make. Brown the meat and throw everything else in the slow cooker before you leave in the morning, and come home to a delicious and filling dinner.

This easy crockpot hamburger hashbrown casserole is true cheesy goodness and has become one of my favorite easy slow cooker recipes for busy nights.

Ingredients Needed for Crockpot Hamburger Hashbrown Casserole

This slow cooker recipe is designed to be easy to make with ingredients you can easily grab on a budget at your local grocery store. (The full printable recipe card with all measurements is at the end of the post)

To make this delicious recipe, you’ll need the following simple ingredients:

  • Ground beef
  • Chopped onion
  • A thawed package of frozen shredded hash brown potatoes
  • Cream of Mushroom Soup
  • Milk
  • Sour cream
  • Shredded cheese
  • Salt, black pepper, garlic powder

You’ll also need the following supplies:

If you don’t want to use ground beef, ground turkey is another good option.

My family prefers using yellow onion in this recipe, but white onion will also work.

The choice of milk is up to you. Whether you use 2% milk, skim milk, whole milk or even plant-based milk, don’t skip this ingredient. The milk helps to make the dish creamy and prevent the hashbrowns from overcooking.

If you don’t have Cream of Mushroom soup, you can easily substitute Cream of Chicken soup instead.

I like using sour cream in this recipe; however, if you don’t have sour cream you can substitute a second can of soup.

When it comes to shredded cheese, the beauty of this recipe is you can use almost any kind! I use shredded Colby Jack cheese, but shredded mild cheddar cheese, shredded sharp cheddar cheese, shredded Monterey Jack cheese or even an Italian blend or Fiesta blend tastes great. This recipe calls for 2 cups, but you can always add more before serving if you really love melty cheese.

If you like your food a little spicy, consider adding some crushed red pepper flakes while the hashbrown hamburger casserole is cooking in the crockpot.

How to Make Cheeseburger Hashbrown Casserole in the Crockpot

This recipe is SIMPLE and a great one to stretch your grocery budget further.

Brown the ground beef on the stovetop using a large skillet. Drain the grease and set aside.

Mix the thawed hash browns, diced onions, ground beef, milk, soup, sour cream, cheese and seasonings together in the crockpot. You can also mix everything in a large mixing bowl first and then dump into the slow cooker if you prefer.

Cover and cook on high for 3 hours or on low for 6 hours.

Before serving, add some extra cheese to the top of the hamburger mixture in the crockpot and cover for about 5 minutes to get it nice and melty.

Serve your Crockpot Hamburger Hashbrown Casserole by itself, with some sour cream on top of the casserole, garlic bread, a green salad or some green veggies!

Store any leftover casserole in an airtight container for up to 3 days in the refrigerator.

Recipe Tips for the Best Crockpot Hamburger Hash

I highly recommend allow your bag of frozen hashbrowns to thaw before place them into the slow cooker. It only takes about 30 minutes, and the meal cooks more evenly because all of the ingredients are able to be better mixed together when the hash browns are no longer frozen.

If your family likes veggies, you can easily add other diced vegetables into this dish. Red pepper, green bell pepper and spinach all work great.

Next time, experiment with different flavors to make your own family favorite version. Add taco seasoning, a can of corn or black beans and a Mexican blend cheese or Fiesta blend cheese to create a taco crock pot hashbrown casserole recipe!

  • 2 lbs ground beef, browned and drained of grease
  • ½ onion, diced
  • 1 (32 oz) package of frozen shredded hash brown potatoes, thawed
  • 1 can cream of mushroom soup
  • 1 cup milk
  • 1 cup sour cream
  • 2 cups shredded Colby Jack cheese
  • ½ tsp salt
  • 1 tsp black pepper
  • ½ TBSP garlic powder

Instructions

  1. In a large skillet, brown the ground beef and drain the grease. Set aside.
  2. Mix the browned ground beef, hash browns, onion, milk, soup, sour cream, 1 and a half cups of cheese and the seasonings together in the slow cooker.
  3. Cover and cook on high for 3 hours or on low for 6 hours.
  4. Before serving, top the casserole with the remaining cheese and continue to cook for 5 more minutes.
  5. Serve hot and enjoy!
