I know I’m far from alone in feeling like some days just get away from us. When it comes to our family, we try our hardest to cook as many meals as possible. However, there are always those days where all of a sudden, it’s 5pm and I’m just now realizing I haven’t even thought about it.

A few years ago we got a deep freezer and it’s been a game changer for allowing us to keep certain food staples on hand, like frozen burritos. They’re easy to grab and heat up quickly one at a time for lunch or dinner.

It had never occurred to me that you could cook them all at once for a hands-off dinner until a friend told me about some frozen burrito hacks she had seen on TikTok. My husband looked at me like I was crazy when I said I wanted to give it a try, but even the kids agree: this is the BEST frozen burrito casserole recipe!

I love that this recipe is basically like a dump meal, but in casserole form. If you love a good hands-off meal, frozen burrito casserole is going to change your weekly dinner time routine!

Ingredients Needed for Frozen Burrito Casserole

To make this easy burrito casserole, you’ll only need 4 ingredients:

  • 8 frozen burritos, unwrapped
  • 1 10-ounce can red enchilada sauce
  • 1 cup mild salsa
  • 2 cups shredded Mexican cheese or fiesta blend cheese
  • Optional for serving and topping: sour cream, extra salsa or pico de gallo, avocado or guacamole, chopped cilantro, jalapenos, hot sauce

From this frozen burrito casserole recipe, I used the package of burritos that we had in our freezer, which happened to be beef and bean burritos. However, you can use steak burritos, cheese burritos or any kind of frozen burrito that you like from your local grocery store.

For the red enchilada sauce and salsa, I opted for mild to keep this recipe kid-friendly, and I’m glad I did. My almost 5 year old and 3.5 year old loved this recipe so much they asked for seconds! I think this recipe would be great with a spicier salsa if you aren’t worried about little taste buds.

If you don’t have any salsa (or don’t like it), just use two cans of enchilada sauce instead. Reversely, if you don’t have red enchilada sauce, you can use 16-20 ounces of salsa instead.

How to Make the Best Frozen Burrito Casserole

Preheat your oven to 375 degrees F. Spray a 9×13 inch casserole dish with nonstick cooking spray.

Unwrap each frozen burrito and arrange them in the casserole dish in a single layer. You’ll need to turn a few to the side to get them all to fit.

Mix the salsa and red enchilada sauce together, stirring well. Pour the enchilada sauce mixture over the top of the burritos evenly. Use a spoon to take a little from the dish and cover any burritos that are missing sauce.

Place the dish in the preheated oven and bake for 30 minutes. Sprinkle the shredded cheese evenly on top of the frozen burrito casserole and continue baking for about 5 more minutes, or until the cheese is melted.

Top with sour cream, cilantro, salsa or guacamole and serve with Spanish rice or Mexican rice for a tasty meal.

Frozen burrito casserole can be stored in an airtight container or with aluminum foil or plastic wrap covering the dish for up to three days in the refrigerator. Leftovers make a delicious quick lunch the next day.

Tips for the Best Frozen Burrito Casserole and Frozen Burrito Hacks

  • Make a tomatillo burrito casserole by substituting green enchilada sauce and tomatillo salsa in place of the regular salsa and red enchilada sauce
  • Add crumbled tortilla chips after baking for an extra crunch
  • Create a more filling meal by adding more protein before covering the burritos with the sauce. Try black beans, a layer of refried beans, leftover rotisserie chicken or fajita chicken, crumbled taco seasoned ground beef, sautéed green peppers and onions or shredded pork.
  • Experiment with different kinds of cheese, like mild cheddar cheese, cotija cheese, Monterey Jack cheese or Colby jack cheese
  • Serve with your favorite taco toppings like shredded lettuce, diced onion, fresh tomatoes, black olives or Mexican corn
  • Want a stronger flavor? Add a little taco seasoning to the sauce before mixing well.
  • If you want it a little spicy add jalapeno slices or hot sauce
