Casseroles are a staple in our house because they’re so easy to serve. From baked ziti to tuna noodle casserole, we love to create dishes that are simple to make and bake.

This loaded hashbrown casserole is one of our family’s favorites. Made with cream cheese, sour cream, chicken, crispy bacon, hashbrowns and lots of cheese, this easy meal has become a regular part of our dinner rotation.

This quick and easy casserole is great for busy nights, if you need a covered dish to drop off for a new mom or friend in need, or if you’re cooking for a crowd. This is how I originally discovered how amazing chicken and hashbrowns taste: a friend made a similar one for our family after the birth of one of our children!

I’ve since tweaked the recipe to make it our own, and love gifting this easy chicken hashbrown casserole to our friends too. It’s a hearty casserole and perfect recipe for family and friends to enjoy and tastes even better the next day.

Ingredients Needed for Cheesy Chicken Hashbrown Casserole

To make this easy recipe, you’ll need the following ingredients:

  • Rotisserie chicken
  • Frozen hashbrowns that have been thawed
  • Bacon
  • Ranch Dressing mix
  • Shredded cheese
  • Cream cheese, softened
  • Sour cream
  • Melted butter
  • Green onions
  • Salt, black pepper and creole seasoning

You’ll also need a 9×13 baking dish.

I personally love using a rotisserie chicken for this recipe because it makes it even faster and easier to put together. However, you can use any leftover chicken you have, or even cook up some chicken breast if you need to. Just be sure to shred or chop it!

Be sure to let the frozen hash browns thaw before getting started for best results. Otherwise, your dish might not cook evenly because of the areas that are still frozen.

You can use any shredded cheese you like for this great casserole! Our family loves Colby jack cheese, but mild cheddar cheese, sharp shredded cheddar cheese or fiesta blend cheddar cheese taste great too.

Make sure the cream cheese has come to room temperature to make it easy to mix.

I also prefer to use bacon bits for this recipe, because again: I’m all about things that are quick and easy, especially simple ingredients. If you would like to fry up some fresh bacon, you’ll need to cook and chop up 8-10 pieces.

How to Make Chicken Hashbrown Casserole

This is one of the best casseroles, and you’ll love how easily this recipe comes together!

Spray a casserole dish with cooking spray and preheat your oven to 350 degrees.

In a large bowl stir together the cream cheese, sour cream, 1 cup of shredded cheese, melted butter, water, ranch dressing mix and about ⅔ of the bacon. Be sure it’s combined well.

Stir in the thawed hash browns, chicken and seasonings. Spoon the mixture evenly into the prepared baking dish.

Bake uncovered for 30 minutes. Remove from the oven and evenly sprinkle on top the remaining shredded cheese and bacon. Bake for an additional 20 to 25 minutes.

Garnish with sliced green onions and serve warm!

Store leftovers in an airtight container in the refrigerator for up to 4 days.

  • 2-3 cups rotisserie chicken, shredded or chopped
  • ½ cup bacon bits (or 8-10 slices cooked, chopped bacon)
  • 2 cups shredded Colby jack cheese
  • 1 (8-ounce) package cream cheese, softened
  • 1 cup sour cream
  • ½ cup butter, melted
  • ½ cup water
  • 1 (1-ounce) package ranch dressing mix
  • 1 (30-ounce) package frozen hash brown potatoes, thawed
  • Sliced green onion for garnish
  • ½ tablespoon creole seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat your oven to 350 degrees F and lightly spray a 9x13-inch casserole dish with nonstick cooking spray.
  2. In a large bowl stir together the cream cheese, sour cream, 1 ½ cups of shredded cheese, melted butter, water, ranch dressing mix and about ⅔ of the bacon. Mix to combine well.
  3. Stir in the thawed hash browns, chicken and seasonings. Spoon the mixture evenly into the prepared baking dish.
