Keto BBQ Chicken Casserole is a quick, easy and delicious family friendly dinner for any night of the week!
The other day I was talking with a friend about easy dinners to make at home, and she mentioned that her family has started keto and she was worried they would be limited on simple meals she could make on a budget. I wasn’t very familiar with it, but started doing a little research and discovered there are a ton of options for families that can be tweaked to be low in carbs.
This Keto BBQ Chicken Casserole with Bacon is one of those dishes. I usually make this with potatoes or use this shredded BBQ as filler for BBQ chicken sandwiches, but it can actually be a really delicious main course by itself.
The secret is the low carb BBQ sauce and 0 carb bacon! So many local grocery stores now offer sugar-free BBQ sauce. I was pleasantly surprised to find a delicious one at our closest store.

Ingredients Needed for Keto BBQ Chicken Casserole with Bacon and Cheese
This recipe only needs a few simple ingredients:
Chicken: cooked boneless, skinless chicken breast is perfect for this dish. This is a great recipe to incorporate leftover chicken, too, or you can also use chicken thighs.
Sugar-Free BBQ Sauce: Your local grocery store will most likely carry sugar-free or low-carb BBQ sauce, but always be sure to double check the label for hidden sugars.
Cooked bacon: Whatever bacon you choose, make sure there are no added sugars. There are cured and uncured options.
Shredded cheese: For this recipe we used Monterey Jack cheese and sharp cheddar cheese, because it’s what we like. If you are closely monitoring your carb count, you can grate a block of cheese at home to avoid added fillers. If you love lots of cheese, add more!
Red onion: I love the crunchiness of onions, and red onion nicely compliments BBQ chicken. If you don’t have onion at home, add a little onion powder.
Seasoning: You don’t need a lot with the BBQ sauce! I used garlic powder and a little salt and black pepper. If you want it to be spicy, add a little cayenne pepper or chili powder.
If you need to cook the raw chicken first, you can easily use the Instant Pot or slow cooker to cook the chicken breasts. Or, if you want to make it even easier on yourself (like I did), simply shred a rotisserie chicken!
Other supplies you’ll also need:
- A large bowl
- Casserole dish
- Nonstick spray
- Wooden spoon
This recipe fits nicely into an 8×8 baking dish, but if you don’t have one (or realize yours is being used by another dish, like I did), you can also use an 9×13 casserole dish.
How to Make Keto BBQ Chicken Casserole
This bbq keto chicken casserole recipe is so easy to make!
Preheat the oven to 375 degrees and spray a baking dish with nonstick cooking spray.
Shred or chop your cooked chicken into a large bowl. Add the barbecue sauce to the chicken and mix well to thoroughly coat the chicken.
Add the diced red onion, seasonings and most of the cheese and most of the bacon to the bowl containing the chicken. Stir well to combine.
Pour the chicken mixture into the casserole dish. Top with the remaining cheese and crispy bacon and place in the preheated oven for 10-15 minutes, or until the cheese is nice and melty.
Serve hot and enjoy!
Store leftovers in an airtight container for up to 3 days (but good luck not eating the entire casserole the first night!).

One of the things I love about this recipe is that you can use nearly any kind of chicken you have, including boneless chicken breasts, chicken thighs, leftover chicken or rotisserie chicken. Can this dish be made ahead of time?
This keto casserole is such an easy dish to preassemble! Just follow all of the steps above except putting it into the oven. Instead, cover the casserole dish with aluminum foil and place in the refrigerator until you’re ready to bake.
Give yourself some time to let the dish come to room temperature before placing it in the oven (20-30 minutes), or be prepared that the baking time will increase otherwise.
What should I serve with Keto BBQ Chicken Casserole?
