Tender Pork Chops in the Slow Cooker
Growing up, I hated pork chops. I’m not kidding! I thought that pork chops were, by design, hard and not very full of flavor.
Turns out that the way they’re cooked makes all the difference (sorry mom). I’ve fallen in love with finding new, creative ways to use pork, especially as it’s a meat I can find on super sale often.
Pork is a great protein to create hearty and nutritious meals for your family, and I love that this recipe uses rice because it’s another affordable staple. And who can’t use some new budget recipes these days, right? (BTW, if you don’t have rice on hand, you can serve the pork and creamy gravy soup mixture over egg noodles, too!)
Pork can be a pretty healthy meat too, with some of the leanest cuts of pork having fewer calories than chicken. According to Pork.org, in a cut of pork you can find iron, magnesium, potassium, zinc, thiamin, niacin, vitamin B12, and B6!
The American Heart Association has certified that pork tenderloin and pork sirloin roast meet the criteria as heart-healthy foods. Pork low in sodium and known as a ‘good’ source of potassium, too.
This family favorite takes *maybe* 10 minutes of total prep, including adding the rice at the end. You literally dump everything in and go, and let the slow cooking do its job.

How to Make Slow Cooker Pork Chops with Cream of Mushroom Soup and Rice
This easy weeknight dinner has become one of our family favorites because it’s so quick and easy to throw together (and because even the picky eaters ask for seconds).
First spray your slow cooker with nonstick spray and place the pork chops on the bottom of the slow cooker.
Sprinkle with seasoning, and then add the sliced onion and mushrooms. Cover with the cream of mushroom soup on top.
Pour the chicken broth on top of the cream of mushroom soup, and top with the butter.
Cover and cook on low for 6-8 hours. Remove the cover and shred the pork chops using a couple of forks.
Next, pour in the rice and one more cup of chicken broth. Stir well, being sure the rice, liquid and shredded pork are well combined. Cover and let cook for an additional 45 minutes to 1 hour.
Once it’s finished cooking, give everything a good stir. If the rice needs a bit more time or is a little dry, you can add a little water before cover and cooking for a few extra minutes.
Serve this hearty meal hot in bowls! If desired, top with shredded cheese, sour cream, chopped green onions or parsley and serve with garlic bread, Texas toast or biscuits.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
Tips for the Best Slow Cooker Pork Chops
Cooking the pork for 7 hours on low heat should be more than enough time. However, if you’re concerned about the pork you can check that it’s cooked before shredded by using a digital thermometer like this. If the internal temperature is 145 degrees or higher, it’s safe to eat.
You can use fresh pork chops or frozen pork chops for this recipe, as long as they’re boneless! I used frozen pork tenderloin chops, because that was what we had in the house. That’s why some of the photos look a little frosty! For best results, don’t open the lid of the slow cooker until you’ve hit that 7 hour mark.
If you like a cheesy meal, pork chops with cream of mushroom soup and rice tastes great with shredded cheese! Next time add in a cup and a half after the rice has finished cooking, stirring the dish well before serving.
This is a great leftover dinner too. Reheat the meal in the microwave for a quick dish!
Not a fan of mushrooms or onions? Leave them out! You can also add a can of diced tomatoes, or sliced carrots and peas too if you like more veggies, or serve these easy crockpot pork chops with a side of green beans or mashed potatoes.
Don’t have cream of mushroom soup? You can substitute cream of chicken soup, cream of celery soup, or even cream of cheddar cheese soup. The tender pork chops and yummy rice might taste a little different, but will still be delicious.
If you like a bit of spice, add crushed red pepper flakes or creole seasoning.
While I’m a big believer that a lot of things can be substituted, I don’t recommend using bone-in pork chops for this recipe. It’s very tough to find the small bones after the juicy pork chops start falling apart in the slow cooker.
