Breakfast might be the most important meal of the day, but I am very guilty of making breakfast for the kids and forgetting to feed myself, too! Busy mornings can feel a tad crazy in our home with three kids under 4. I try to meal prep in advance, but there are always those mornings here and there where I realize I haven’t eaten and really, REALLY don’t want to make anything that involves a lot of clean up.

This air fryer frittata recipe is so easy, and it’s become a staple in our home. A twist on the classic frittata, this recipe is easy to customize to your own family’s tastes. Choose your favorite vegetables and meat!

This is also a fantastic recipe for using up leftover food. I love mixing in chopped up leftovers (like leftover veggies from the night before, or pulled pork and chicken) to make a hearty, filling and delicious breakfast without all of the extra fuss.

This breakfast frittata is packed with protein and is also low carb. Plus, it’s made with inexpensive ingredients, meaning it will fill you up without draining your wallet.

Ingredients Needed for Air Fryer Breakfast Frittata

This veggie frittata recipe is truly customizable, but there are a few key ingredients:

  • Eggs
  • Cheese (any shredded cheese works!)
  • Vegetables (I like spinach, tomatoes, avocado and onions)
  • Seasonings like kosher salt, black pepper and red pepper flakes
  • Cooking spray
  • Parchment paper

Like many egg dishes, you can also easily customize this recipe with a variety of vegetables and protein! Try adding fresh vegetables like diced red bell peppers or green pepper, mushrooms, green onions, fresh chopped herbs, crumbled breakfast sausage or chopped bacon. Make sure you use diced vegetables or small pieces.

You can try different types of cheese as well. I like to use a shredded cheese blend because it’s what we usually have in the refrigerator, but you can also use shredded cheddar cheese, mozzarella cheese, feta cheese or parmesan cheese too.

A fan of different (or more) seasonings? Use what you personally love! This easy breakfast frittata tastes great with garlic powder, creole seasoning or Italian seasoning, or served with sour cream or hot sauce.

Depending on what extra ingredients you add, this recipe almost becomes like a air fryer breakfast casserole! Experiment with different ways to make this air fryer breakfast frittata recipe until you find your personal favorite.

If you would prefer, you can also make this air fryer frittata recipe using a cake pan in the air fryer baskets instead. You will need to add a few more minutes of cook time if you choose to do this.

How to Make an Air Fryer Frittata

Preheat your air fryer to 350 degrees F. Line your air fryer basket with parchment paper and spray with nonstick cooking spray.

Crack the eggs directly into the air fryer basket. Add your seasoning, prepared vegetables and cheese. If you would prefer a scrambled egg frittata, first crack your eggs into a large bowl and whisk the eggs. Add your extra ingredients and mix well to combine, and then pour mixture into the prepared air fryer basket.

If you would like to use a pan instead to make this delicious frittata, spray the pan with cooking spray first, place into the air fryer basket next, and pour the egg mixture into the prepared pan.

Cook in the air fryer until the frittata is set, about 15-18 minutes.

Cut individual portions to serve. Store leftovers in an airtight container in the refrigerator for up to 3 days. You can also use this meal for an easy breakfast meal prep. Just put each portion in its own air-tight container and place in the refrigerator!

For a complete meal, you can serve this delicious recipe with a green salad or buttered toast and hash browns.
