As a mom of three boys, it can very quickly feel like my kids are eating us out of house and home. They’re ALWAYS hungry!

Feeding them easy meals that are still nutritious and filling can sometimes be challenging with their ever-growing appetites. That’s one of the big reasons our family has fallen in love with Kodiak Cakes Power Cakes. This whole grain pancake mix has 14 grams of protein and 5 grams of fiber, which means their tummies stay full longer (always a win).

Feeding your family a healthy whole-grain carbohydrate source also provides sustained energy for a busy day of school or other activities. If you enjoy working out, Kodiak Cakes are great to fuel up on before lengthy or strenuous workouts too.

You can use any kind of milk for this recipe, including whole milk, skim milk, unsweetened almond milk, coconut milk and oat milk. Keep in mind that if you choose a milk that has a flavor (like coconut milk or sweetened almond milk), you might need to adjust your seasonings.

The best part of using Kodiak Cakes as a base for your protein waffles is that you can easily customize and adjust the flavors to your liking. I love using a little vanilla extract, cinnamon and brown sugar, but if your family prefers some bolder flavors try some pumpkin spice seasoning! Experiment and create your own favorite recipe.

How to Prep Kodiak Cake Waffles for the Week

These waffles are such an easy meal prep recipe and make a great quick breakfast on busy mornings. I like to cook up a batch and freeze them. In the morning we just grab a frozen waffle from the freezer and pop it into the toaster before heading out to school and work!

If you want to do the same, allow the waffles to cool fully after cooking. Transfer each to a plastic bag, or wrap them individually in plastic wrap or parchment paper and stack in a Ziplock bag or other freezer safe bag or container and freeze. They’re good in the freezer for up to 2 months!
