This simple recipe for air fryer steak bites can be used to make a quick meal, an easy appetizer (just add toothpicks!) or to cook up a little yummy steak to top a salad. You can also easily experiment with adding different ingredients. If you like your steak a little spicy, add some red pepper flakes.

While the recipe calls for a little time to let the steak bites marinate, you can skip those extra minutes if you’re in a hurry. Just be sure that your steak is well-covered in the garlic butter sauce if you do!

However, this is one of the only recipes I’ve shared where it’s really important to preheat the air fryer before you start cooking. The baskets need to be hot to allow you to get a mild sear on the steak, without overcooking the steak bites. You should hear a little sizzle when you add the cubed steak to your air fryer baskets.

How to Make Air Fryer Steak Bites

Cut the sirloin steak into bite-sized pieces, ensuring they are all similar in size to allow for even cooking.

In a small bowl, combine the olive oil, salt, pepper, onion powder, garlic powder, and brown sugar. Mix these ingredients well to create a marinade.

Toss the steak pieces in the marinade, making sure they are evenly coated. Cover the bowl and place it in the refrigerator, letting the steak bites sit in the marinade for about 15-20 minutes to absorb the flavors.

Preheat your air fryer to 400 degrees Fahrenheit (200°C) for 5 minutes. Spray the air fryer baskets with cooking spray, and arrange the marinated steak pieces in a single layer in the air fryer baskets. Leave space between the steak bites to allow for proper air circulation.

Cook the steak in the air fryer at 400°F for 4-6 minutes, depending on your preferred level of doneness, shaking the basket halfway through.
