We are all about easy dinners in my house, and there’s a special place in my heart for meals that come together with items we almost always have on hand. There’s nothing worse after a long day to start dinner only to realize that you forgot to get a key ingredient at the grocery store!
This 4 ingredient potato soup is perfect for nights like that. It’s thick, creamy and delicious, and I love throwing it together on chilly nights or cold days. It goes perfect with garlic bread and a side salad.
There’s just something about soup that makes me instantly feel better! Over the years soup recipes have become one of my go-to favorite comfort foods, and not just during the winter months! A bowl of comforting soup can instantly lift my spirits, especially when it can be cooked fast.
Sometimes I have the energy for a ton of steps, while other nights I’m all about minimal ingredients. That’s one of the things I love about this recipe: you only need 4 items to make this soup, but you can also easily customize it to your personal preferences by adding extras!
This recipe is ready in just about 30 minutes on the stove top, but you can also make this a slow cooker 4 ingredient potato soup too. I’ll share with you both ways to prepare it.

Ingredients Needed for this Easy 4 Ingredient Potato Soup
The beauty of this recipe is that you really, truly only need 4 basic ingredients to make this soup. If your home is like ours, you probably already have them on hand:
- Potatoes
- Onion
- Broth
- Milk
You’ll also need a few seasonings:
- Salt
- Black Pepper
- Garlic Powder
I use russet potatoes for this recipe, but you can also use Yukon gold potatoes or red potatoes. I prefer yellow onion, but I’ve also made this with white onion before too. When it comes to broth, this soup recipe tastes great using either chicken broth or vegetable broth. The choice is yours!
I make this recipe using almond milk, because our family isn’t huge on cow milk. However, you can also use almost any type of milk, including whole milk, skim milk or 2% milk. If you prefer, you can also add heavy cream to this recipe.
This simple soup tastes fantastic with just those four ingredients, but it’s also a fantastic base for a soup that can be customized for the whole family with extras like cream cheese, shredded cheese, crispy bacon, and a little creole seasoning, ancho chili powder or red pepper flakes if you like extra spice.
You’ll need a large pot or a Dutch oven. I own this one and love it! You’ll also need an immersion blender like this one. If you don’t have one, you can also use a blender.
How to Make 4 Ingredient Potato Soup
This basic recipe is a great choice for an easy dinner any night of the week!
First, clean, peel and chop the potatoes into one inch pieces. Set aside. Next, chop or dice your onion.
In a Dutch oven or large pot heat the olive oil over medium-high heat and add the onion. Saute for about 5 minutes, until the onion begins to become soft and translucent.
Add the potato chunks to the pot and your broth. Season with salt, pepper and garlic powder and bring everything to a boil.
Once boiling, reduce the heat and cover. Allow the soup to simmer over medium to medium-low heat for 15-20 minutes. You’ll know it’s ready when you can pierce the potatoes with a fork.
Remove the pot from heat and add the milk. Stir well.
Use an immersion blender to blend the soup to your desired consistency. Keep in mind that the more you blend it, the creamier and thicker it will become.
If you feel like the soup has gotten too thick, add a little bit more milk and stir well.
If you would like to add butter, shredded cheese (like shredded cheddar cheese or shredded Monterey jack cheese) or cream cheese to your soup, add it while the soup is still hot and stir well again so these items melt.
You can also top this 4-ingredient potato soup with sour cream, green onions and a little bacon bits, or another garnish or favorite toppings of your choice!
Store leftovers of this creamy potato soup in an airtight container in the refrigerator for up to 4 days.
Slow Cooker Instructions
You can also easily make this 4 ingredient potato soup in the slow cooker.
Add the chopped potatoes and onions to the slow cooker along with the broth and mix well. Season and cover and cook on high for 3-4 hours or low for 6-8 hours.
Once you can easily pierce the potatoes with a fork, add the milk and stir well. Use the immersion blender and blend until you reach the creamy consistency you want before adding any extras.
